Pork stew with Nomad Brewing Flying Dutchman Freak Kriek

A submission from a customer. The Nomad Brewing Company Flying Dutchman Freak Kriek Zero Point Three Feel Free Merry Cherry Beer is a wonderfully drinkable kriek with a pleasant cherry sourness. With an accessible slightly sweet finish and 0.3% alcohol! This has caused a customer to start using this to prepare a pork stew.

Ingredients

  • 1 kg of pork stew (Procureur, shoulder or ham hocks)
  • 1 bottle of Nomad Brewing - Flying Dutchman Freak - Kriek
  • 2 onions (coarsely chopped)
  • 500 ml beef broth or stock
  • 4 tbsp red wine vinegar
  • 1 tbsp brown sugar
  • 1 tbsp. mustard
  • 3 sprigs of thyme
  • 3 bay leaves
  • 1 Star anise
  • 50 grams of butter
  • salt & pepper

Preparation

Coarsely chop the onions. Cut the pork into pieces that are not too small.

Melt half the butter in a casserole dish and sauté the onions. Caramelize with a spoonful of brown sugar. Deglaze with red wine vinegar. Turn on low but keep warm.

Put the rest of the butter in a high-sided frying pan and get the pan hot. Use a little extra oil if necessary to prevent burning. Brown the pork in the frying pan so that it looks nice and brown all around. Add the meat to the onions.

Pour the contents of the bottle of Flying Dutchman Freak kriek into the frying pan and stir to loosen the caking. Add the beef stock and bring to a boil. When everything is hot, pour the contents into the onions and meat. Now add the thyme, bay leaf, star anise, pepper and a spoonful of mustard and stir. Bring everything to a simmer and let simmer for 2 to 3 hours. Season with salt and pepper.
