About the brewer
Tsjomme Zijlstra, founder of Kaapse Brouwers, actually graduated in Philosophy, but discovered while working for the very first Craft beer bar in England (The Rake) that he wanted to delve more into the world of beer. Back in the Netherlands, he started brewing at home and then made contact with the owners of De Molen brewery. They taught him the tricks of the brewing trade! With a compact brewing installation that De Molen had left as a set-up, Kaapse Brouwers became a reality.
With the desire to do it bigger, Tsjomme then went to the City of Rotterdam with a number of other entrepreneurs. The plan was to transform the oldest warehouse in Europe into a foodhall. This plan was accepted and the Fenix Food Factory became the first home of Kaapse Brouwers as a microbrewery and tasting room. Then, in collaboration with Genevieve Vachon, came an expansion with Gastropub Kaapse Maria (Rotterdam Centrum) and now there is a fully independent brewery in the iconic Keiledistrict in Rotterdam West, with Etienne Vermeulen as head brewer.
